Ingredients
For Dough-
All-purpose flour- 200 gm (You can use fine flour or a combination of wheat flour and all purpose flour)
Carom seeds(ajwain)-1/2 tsp
Cooking oil- 4 tsp
For Stuffing-
Potato (Boiled)- 6 pcs (500 gm)
Fresh peas- 25 gm
Cashew-10 to 12 (you can use roasted peanuts instead of cashew)
Green Chilli - 3 to 4( as for your taste)
Ginger (grated) - 2 inch
Garlic (grated) -10 to 12
Chat Masala powder- 1 tsp
Amchur- 1/2 tsp
Roasted Cumin powder
Salt (as for your taste)
Red Chilli powder- 1/3 tsp
Garam Masala powder- 1/2 tsp
Turmeric powder -1/3 tsp
Cooking oil for Frying and for stuffing Masala
Green Coriander leaves
Preparation
Step 1
Dough Preparation
Put Carrom seeds, Salt and Oil in purpose flour rub it with your hand, and add water in it While adding water Be sure that do not make the dough too soft. Mix the dough for 10 to 15 minutes until its mix well. Then Cover it and keep for 2o to 30 minutes
Step 2
Stuffing Preparation
Crush potato but not too much. Keep the pan on the stove when the pan will be hot put Ginger, Garlic, and Green chili cook for 1 minute when its color will brown then add pea and mix it after that add Turmeric and red chili powder and Cashew(it's optional) cook for 2 minutes add potato in it and mix it very well. Now add Garam Masala powder, amchur, Roasted Cumin powder, Salt (As your taste) Cook These on a low flame for 5 minutes and mix it well. Off the stove and put green coriander leaves. Let the stuffing cool down completely. Now add Chat masala to it.
Step 3
Knead Preparation
Make equal sizes of balls to make a samosa. Take one dough ball and dust it with plain flour, Flat ball little on your hand again with the help of dust(sukha ata) roll it into a small roti shape you can roll as per your taste your like if you like to think or fat layer. cut dough from the middle into 2 equal parts. Take one portion and fold it from where you have cut apply few drops of water and food it and seal all the joints properly. fill the stuffing in it and press it gently. apply little water on the edges and seal it. Repeat the same process to make all samosas.
Step 4
Frying Samosa
Keep the pan on the stove and put oil on it when it will hot put samosa on oil on a low flame. And we have to fry it on low flame till it turns golden brown from both sides. It can take around 8 to 10 minutes to fry. Now bring out samosa from oil and your samosa is ready!! It's time to serve. You can take it with green chutney or Meetha chutney or with tikha chutney also. If you are a great fan of sauce you can eat with that also.
Tips
To make samosas cripsy, make sure you knead a tight or stiff dough as the soft dough will not yield best results.
Before kneading the dough, keep it in mind that you do not need to overwork it and mix the oil with flour at least 5-6 times. This will ensure you have crispy samosas.
You should keep aside the dough for at least 40-60 minutes for best results.
While rolling the dough ball, keep it thin and do not use any flour in it. You can use a little oil to roll the ball evenly.
Always fry the samosas on low flame irrespective of how much time it is taking to fry. This will also ensure that your samosas are blisters free and cooked from inside.
