About the Recipe

Litti Chokha is a remarkable dish from the state of Bihar and Jarkhand, but it is popular in India. Litti and Chokha are absolutely delicious and are the rustic way of cooking. It is the famous food of Bihar when any other state people come they want to taste it. If you are from other state and You haven't taste then you must should cook it and try litti Chokha. You cook again after tasting it.

Ingredients

  1. Wheat flour  - 3 cups (450 gms)

  2. Ghee   - 3 tbsp (40 gms)

  3. Sattu - 1 cup (125 gms)

  4. Green Coriander ) - 1/2 cup (finely chopped)

  5. Mustard oil - 2 tbsp

  6. Lemons - 2

  7. Green chilies ) - 5 to 6 (finely chopped)

  8. Ginger - 2 inches (grated)

  9. Salt  - 2 tsp (or to taste)

  10. Carom seeds  - 1/2 tsp

  11. Baking Soda  - 1/4 tsp

  12. Pickle Masala - 1 tbsp

  13. Tomatoes - 4 (300 gms)

  14. Eggplant - 1 (300 gms)

  15. Boiled Potatoes  - 4 (300 gms)

Preparation

Step 1:


For Dough-

For dough take wheat flour in a mixing bowl, add ghee, salt, carom seeds, baking soda, Add water in small portions and knead soft dough. cover and keep dough aside.


Step 2:


For Chokha-

For chokha take eggplant and tomatoes, grease with oil. Then put over a net and roast over flame. Flip at intervals and roast till skin turns black. Once roasted take out the eggplant and tomato in plate to cool, then peel the skin. Add boiled potatoes to the peeled tomatoes and eggplant. Mash well. Add salt, finely chopped green chilies, ginger grated, finely chopped green coriander, juice from 1 lemon, mustard oil. Mix well. Chokha is ready.


Step 3:


For stuffing-

For stuffing take sattu in a bowl, add salt, grated ginger, pickle masala, green coriander, finely chopped green chilies, mustard oil, juice from 1 lemon. Mix all the ingredients well. If seems dry add some water and mix again.


Step 4:


Making shape of litti-

Grase hands with ghee, squash the dough, Break the dough into small lumps, give shape of peda. Make it hollow with thumb and fingers giving bowl shape, put stuffing, lift sides, close the litti. Keep in plate. follow the same procuder to making all litti.


Step 5:


Roasting Litti-

You can roast it on upla or coal, appam maker and jali stand over flame. Once the littis are ready, dip them in ghee if desired or break and pour ghee over them. Take a bowl full of chokha and Enjoy your litti chokha. YOu can take curd also. It increase its taste.
